 2001 STEVENSFRANC This two ton lot was harvested on 10/08/01 and was one of the last Cab Franc lots to be picked from Champoux Vineyard. The additional hang time gave the fruit time to reach peak physiological ripeness with a moderate sugar level of 25.5 brix after a two-day cold soak. Open-topped primary fermentation finished in 12 days and the wine was pressed off into one-year old French oak barrels to finish ML. Five months later half the lot was placed into new French oak. After spending 22 months aging in oak and a few rackings in between, we bottled on 8/7/03. With finished TA of .63g/100ml and a pH of 3.75 the wine firmness and structure are quite elegant.
